Improvements and Updates to Mod Links and Availability (#68)

- **Blanks Mod**
        This mod is no longer available as the author has retired it so I have removed it from the list.
- **Quick Restart Mod**
        The old link (https://github.com/nicholassam6425/balatro-mods) was be improved by directly pointing to the specific file:
        https://github.com/nicholassam6425/balatro-mods/blob/main/steamodded/mods/quickrestart_steamodded.lua
- **JimboStats Mod**
        Instead of a Discord link, it was made more convenient as it now lists the mod’s GitHub link (https://github.com/JimboStats/jimbo-stats-mod) for easier access and transparency.
